There is an engine builder in Freehold, can't remember the name or what machine services they offer. You can try searching google for it.
There is a machine shop/builder by me in Sayreville, NJ called Eddies Valve Grinding (http://www.eddiesvalvegrinding.com/) that offers many machine shop services including porting and polishing. Never had to use them yet though.

Funny, we started looking at houses down in Jackson, NJ
