Wouldn't it be easier (and lighter weight) to just use one BIG system? Two if them means carrying some redundant stuff. An F-body interior is not very big.
IIRC the condenser size is one of the major limits on AC capacity. The system has to get rid of all that heat being taken out of the cabin.
