Project Plan for a 65 Fastback?

I'm about to embark on a 65 Fastback project. Will post up a build thread when I get the car in my garage.

Right now, the car is down to a bare shell with rust repairs completed and epoxy primer on it.

I've worked on a few cars over the years, but nothing as big as this one. My biggest 'restoration' type of project was putting a 354 Hemi into a 52 Dodge Truck. The truck was a driver...I just had to work out the engine swap and some mostly bolt-in mods with a little bit of fabrication (brackets and such).

      My basic modifications planned are:

Shave Drip Rails (could sure use a link to a how-to thread of video)
Front Suspension...leaning toward the R&C setup because I can run coil-overs or air-shocks and a rack & pinion steering rack.
Rear Suspension - probably going to do a 3 or 4-link rear
Interior will be mostly stock appearing with some updates (modern seats, a/c, power-windows, basic radio to plug the iPhone into, center console)
Motor/Trans - small block ford with a T5 (going to go relatively mild to try to stay within a budget).

When starting with a shell, does anyone have a basic project plan (order to do things) they can share with me? It would be nice to have something to start with.
