Important question before you move forward: What oil pan are you using? Pictures are helpful to answer this too...

I hope this doesn't sound negative:
With that pan, in your chassis, it's going to probably be the basic swap plates with sbc mounts.
With the amount you have invested in that motor, here's the option I would go with.
That pan, as opposed to the 302-2 is still a little deep in the front cover portion for the Holley swap plates/kit. I would pull that pan off and sell it and go with the 302-2 pan and the Holley swap mounts and their crossmember and possibly their headers as well, as all of it is built to match and tuck the motor and headers up in the chassis as far as possible. By the time you piece all these pieces together and put the time in to researching what works and what doesn't, you're going to be in the same boat.
I do not sell these parts or usually market them like this, but based on how my build went, it would have been nice to have a bunch of pieces already matched and put my time and efforts into other places.
If you do go with the swap plates, consider all the options... Some are sliders and some have several pre-drilled setback holes, etc. I think, after I went with the 1" setback carshop plates, I would have preferred to have the ability to move the motor back forward just a hair after everything got put together. I think I would have liked the multi-setback pre-drilled plates. Just some insight.
