So I have the cpp c5 brake kit. My question is can I drive the car with out the cables hooked up ? I know they have the self adjusters built in.

Isn't the CPP C5 steering knuckle and brake kit for the front only? I don't believe they offer and C5/C6 based parts for the rear.
I don't know if you have drums or discs, but the rear brake calipers or drums should still function even without the parking brake cables attached. Of course, you won't have a parking brake.
I have no idea if your brake proportioning will be the same after upgrading to C5 front discs and calipers, but the parking brake cable does not affect that.

So I found the intructions. Sorry these were all parts that were with the car when I got it. Its the cpp 9" rdbk-12 kit. Looks like a ford rear brake set up.

Yes, you can drive it without the Ebrake cables hooked up.
