I got a custom license plate for my Century Turbo Coupe / GNX project (GN HEX) - yes, I'm Pa. Dutch - and if I drop the insurance on it, I have to return the Tag and it can never be re-issued. So, I keep it insured, even though it has not been (and will not be) on the road for years.
