I honestly don't think you could go wrong with any of these car thats been recomended except for maybe the pinto but my pick would be a 63 galaxy or a 63,64,66, or 67 fairlaine I've always really like these old cars looked and I've never seen very many fixed up nicely.

62-67 Falcon. Relatively small and light, and most of the first gen mustang aftermarket parts will work as well.
