The F-car LS1 brakes are an easy conversion as are the C5/C6 Corvette brakes. Either choice will provide 12in disc's that will really make a difference if you also had the corresponding disc's to the front. Tobin at Kore3 has the brackets needed to help pull off the conversion.

anything from 78-2002 is good if you can get cheap. 96-2002 are better just do to a reliable parking brake.

I know 4th gen F-body rear disks will work with a 10 bolt GM rear. You'd need two lefts or two rights to pull it off. The 3rd gen stuff just doesn't have the braking power to warrant use. Don't even look at 2nd gens.
If you come across an IROC-Z, nab the steering box whether you need it or not. It's quick ratio with extra firm valving. Lincoln mark 8s, last gen T-birds and cougars have a great electric fan too.
These are all cheap buys with a pretty high demand amongst restomodders.

what should i pull off the ls1 camaro rear disc brakes to convert my car to rear disc brakes.

Pull the backing plates/parking brake assembly, rotors, calipers, pad cage, hardware parking brake handle and parking brake cables.
You are going to have to pop the diff cover off the diff and pull the pin to get the c clips off of the axles.

I don't know myself. Perhaps someone more knowledgeable can chime in. My understanding is that 4th gens are a bit screwy in the rear and two lefts or rights will be needed to swap to a 2nd gen. A monte? No idea.
Montes are cool cars. I'm looking for one to do a chevelle SS meets personal luxury coupe build when I free up some projects. Fell in love with them when I saw F&F Tokyo Drift.

The camaro is most definitely not 5x5. I have the exact same brakes and can assure you my 5x4.75" wheels fit on stock rotors.

Do you have factory Drum/Drum or Disc/Drum brakes?
Factory 14" or 15" wheels or other?
Power steering or manual?
I believe you need at least 16" wheels to make this brake project start to fit.
You will also have to address your master cylinder and so on.
If you do go with the 4th Gen F body disc brake setup, get everything for the rear including the parking brake cables, and the calipers from the front if they are reusable. If not, you could use them as cores for over the shelf new calipers.
I'm thinking from what I have seen in the past this portion should set you back around $125.00ish depending on the condition of the braking hardware.
There will be additional hardware from various vendors that will need purchasing to make it all work out in the end.
And as stated before, It might be of interest to grab a Iroc Camaro steering box or sort.
FWIW i have a few left over components available from my 4th Gen F body to 1st Gen F-body disc brake upgrade if interested.
These threads from over at Team Camaro should be helpful before you start getting too crazy with your project.
It never ends once you start with the upgrades.

If you have 15in wheels you can use 98-02 s-10 rear brakes and keep 15in wheels

The rear disc on my 1978 Camaro are from a 79-81 Trans Am. I don't have any complaints about them and all the parts are off the shelf items. I would invest more in the front brakes than the rear.
My set-up probably ran me close to $500 shopping at Rock-Auto, but I bought a new booster, MC, Prop valve, rear brake cables, levers, calipers, rotor, hawk pads etc... If you found a donor and used the old parts...could be done for $100 or less. To do it right, your going to spend some money no matter which way you go.
The rotors are 11"

I have 350.00 in my rears and about 900.00 in my fronts that is not bad for drilled and slotted rotors and 12in disc

S10 is a bolt on and parts are readily available. and Corvette rotors slide over the parking brakes too.
I used this kit on the rear with drilled and slotted
http://www.getdiscbrakes.com/afxrd05
and I used this kit front from CPP (http://www.ebay.com/itm/1967-1968-1969-CAMARO-13-BIG-DISC-BRAKE-KIT-NO-MACHINING-REQUIRED-BOLT-/250955458212?pt=Vintage_Car_Truck_Parts_Accessorie s&vxp=mtr&hash=item3a6e1c66a4)
and I used this power booster/ prop valve setup from the right stuff (http://www.getdiscbrakes.com/g10030572) but you need to call when ordering this setup and have them send you the Disc/Disc prop valve
I used the pads that came with each kit and it worked well, but I switched to Raybestos pro grade ceramic later and there much better

It’s going to depend on whether you have staggered shocks or not iirc.

If you want to DIY your own rear disc conversion; I put rear discs on my '72 442 convertible project from a 2001 2WD Chevy Blazer. I needed a 1/4" spacer to center the caliper over the rotor, and 1/2" split donut bearing spacer to make up the difference in thickness of the drum backing plate versus the thicker Blazer backing plate. This was needed because the stock Olds 10-bolt uses bolt-in axles. I also installed a Lokar style parking brake cable system to have a functional parking brake. Here's some pics.
