As the title states. My plan is to build a 383 to replace my worn engine. I would like to FI it, but build my own system. I have the tools and skills to fab up my own intake using a factory style throttle body and factory style injectors. I would prefer not to use a mega squirt ECM. Can LS electronics be adapted to use like this?

Getting the correct 1x cam and 24x or 58x ( depending on computer year) crank signal for the computer to work correctly may be a challenge.

You can do OBD1 GM pretty easily rather than OBD2 LS stuff. No crank trigger, etc needed. That's the route I'm going since my other two are already OBD1.
