Okay. Sight unseen, Im going to look at a 1968 mustang that is "complete" except for the engine, and front suspension. The owner had pulled the stuff to have it worked on, and that mechanic is gone now.
So the project is for sale. Insanely cheap. the pickle? I dont even know if it's a fastback or not. Im going to run out the door in 30 minutes to look at it and throw money at the guy if it's nice, either way.
Now, having said all that, how much is a 68 stang with no motor and no front suspension worth assuming it's not a basket case?

Coupe from 1000 to 2500 depending on how nice the rest of it is. Fastback 4000 to 6000.
If rusty then go down from there.

If you're accurate, I could have got a Mustang and put an LS1 in it for what I paid for my Camaro.
I've seen a very few for like 7-8k one coupe and one fastback. Sold pretty quick, though. Not sure the pricing in your area. Check Craigslist for some quick pricing.
EDIT: I see your in Ca, that justifies the lower prices.

Well, I decided it wasn't worth it. The car was all there. A coupe, maroon with a white vinyl top. Used to be a 6 cyl car. Had some Ansin mags on it. Looked like it was parked in the 70s. Even had spring jacks under it. Rust was minor, little bit up by where you'd expect it on the floor pans. The interior was gutted. The suspension arms were gone, but the spindles, brakes and rack and pinion were there. It'd have made a nice race car.
The guy only wanted 500 bucks for it. He has to sell it by this weekend, the house is being forclosed on.
