A question for those of you that have two different sets of wheels and tires (whether its track tires, street tires, winter tires, whatever). What do you do to store your extra set of wheels and mounted tires? Right now I have my summer wheels and tires for my Jeep laying face-up and stacked one on top of the other out in my dark, dry cedar shed. Is that OK?

They'll be fine, just check the pressure before you install them next time.
If I ever get around to building a shed out back that's where mine are going. I keep my extra set of wheels & tires in the basement and it's a real pain to drag them upstairs.

If you put the wheel combo's in large garbage bags on a low humidity day and seal them the condensation that forms from temperature changes in your shed will be outside of the bags and your wheels will stay nicer looking longer. Also the rubber won't dry out as quickly and it will take longer before the performance diminishes.
Normal tire life is 7 years exposed to regular air according to my tire guy even if it's never mounted due to evaporation of the polymers in the rubber. Drag slicks, road track, and other soft compound tires dry out even quicker and loose performance after a couple years. I think thats why ya always see people selling slicks with few passes on them.
