I ended up going with the ididit Pro-Lite in my 69 Firebird so now I need a start button solution.
My #1 concern is the right kind of button for what *I* want. I want to be able to push it once and it be the same as putting the key into the "on" position". Push it the second time and it crank the engine. Then the opposite, push to shutdown the engine, then again to turn everything off. I don't care about any other bells and whistles beyond just that specific button function.
Any ideas where I can get a start button setup like this? With the plug and harness hopefully.

Pick your poison. Anywhere from $20 up to $400+. I've used the cheapie kits with no issues but I used it to trigger a bigger relay and I always bought two so I could have a backup. I've also installed the high dollar ones with good success. It's all going to depend on your budget.

Thanks, I'll take a look. Money is no object on this one, I'd even commission someone to make it if I had to.
EDIT: The first one doesn't work the way I want...
The second doesn't say how it functions...
The third one is maybe an option.... so is the 4th...
The 5th doesn't seem to do it.

EDIT 2: Doesn't look like the 3rd option will work in terms of keeping things on after pushing it to turn off the engine. I would need to push it again without the brake pressed to turn things back on which is just a pain when I want items like my EWP and radiator fans to stay running after engine shut off like I want until I can push the button again to turn off the car accessories.
That leaves me with your #4 option for me to investigate further. I'm looking at the PBS-I for classic vehicles since I don't want the other features.
EDIT 3: Looks like #4 won't do exactly what I want either.
I guess I'll reach out to them and see if they can do a custom setup for me or refer me to a place that can if there is nothing on the market that will work the way I want. Nothing money can't fix if I can find the place with the technical expertise.

Actually the Advance keys does exactly what you want. I've been running it since 2014. Can operate it a few different of ways...
I can push it once to go to the accessory position.
I can turn on the ignition by pushing it a second time and leave it there. Or I can depress the brake, push it again it'll start the engine.

I also can go straight from off to engine start by depressing the brake, pushing the button once and it'll start the engine. Or if I get into accessory position, I can skip ignition-on and go straight to engine start by pushing the brake and pushing the button.
Once the engine is running, you have to push the brake and hold the button for about a second to shut the engine off.
One thing I did though was to wire the system "in parallel" with the factory keyed ignition. If something ever malfunctions, I won't be left stranded since I can still put the key in the ignition to start and drive the car. But, that hasn't ever happened.
Advance keys is a really good system, and very well thought out. It has all sorts of other options for modern conveniences and security.

But can it stop the engine with a push leaving everything else on. Then a second press turn everything off. That's what it looks like it can't do, along with all the others. Please correct me if I'm reading the description incorrectly or something is being left out.

Oh, I didn't catch that part. No, it won't do that (at least not that I"m aware of)... if you shut the engine off, the whole system goes off. You'd have to push it again to turn it back on.

Ok, thanks for the confirmation.
There are lots of times when I want everything on without having to have to stop to turn things back on, like gauges, my stereo, EWP, radiator fans, and if I can find something that will it would be fantastic. I've been in modern cars where the buttons work precisely like I'm looking for. Just need to find it aftermarket or custom, or maybe an OEM that's modified custom.

Ron Francis has this Retain Power Relay that will keep your radio and power windows functioning until you open the door. Don't know if that will be a solution for you, if you can't find everything you need in one box.

This might work- I use a Hella timed relay- turn off the ignition and it'll stay on for up to 15 minutes- programmable. Simple and straight forward

And here's another option - a PAC TR7
Programmable inputs- pos or negative- timed - push the button once-on -then twice off- so I could certainly do what you are wanting-and you can sequence the outputs and time them.
I used it for my door locks(among other things)- where as one button would lock/unlock doors-push once locks- twice within a programmable time and it locks- has 4 outputs

Sounds like a PDM and keypad or rotary pad would do what you want. You said money is no object, so a Motec PDM 15 (https://www.milspecwiring.com/MoTeC-PDM15_p_172.html) and 5 way rotary keypad https://www.milspecwiring.com/5-Button-Rotary-Keypad_p_2334.html). Buttons can be programmed to do whatever you want, momentary, on/off, hold for certain time to change functions, one, press, two press, etc. You can even make a sequence of holding buttons to initially power everything up (theft/idiot deterrent).

I'm about a year away from when I will have my entire car professionally re-wired and I planned them to utilize RacePak PMUs so they can talk to my Holley EFI.
Perhaps this is a project to wait until then.

Did you see Apple has this new feature called CarKey and will allow you to unlock and start your car with the watch or phone? Pretty cool to me, just being able to hop right in your car and go. I hope there's an aftermarket compatible version in the near future. They say new BMW's will be the first to use this feature.
