On my tube chassis, Chevy 350 powered, VW Squareback, that I have resumed work on after some health issues, I have a question. I will be running an electric fan only. How close to the engine can I mount my radiator and at what height should the top of the radiator be in conjunction with the top of engine?

Puller fan? Better then a pusher for efficiency. Do you have the radiator and fan? What front drive set-up on the engine? I would try to keep a couple of inches at least just so the fan output isn't blocked.
If the top of the radiator is below the thermostat you will have a hard time burping the air out of the system. This may call for an expansion/fill tank remote mounted from the radiator. If you can keep the radiator cap a bit higher then the thermostat you shouldn't have an issue.
