What's your goal with the vehicle?
I think a lot of that decision is personal preference. Personally I like a lot of features of an auto, but when driving one....I always miss the 3rd pedal.

Really comes down to personal preference. If you were planning the build as a flip, the manual would be the better choice but since you're keeping it, use the transmission type you prefer. There aren't any rules that say you'll enjoy it less or have less fun in it just because it has an automatic trans.

If its going to be your DD auto if it's going to be a 2nd car manual I have a auto DD which is one of the reason I decided on going with a manual trans in my car

I currently run a 4L60E behind my LS1 and next winter plan to switch to a T56. Can't seem to get the auto to live on the road course and autox. As for a daily driver with no track time, pretty sure I wouldn't have any issue with an auto. On the last build we threw the best of the best into it so with some luck it won't be an issue this year.

I've owned both and would reco the t56. Both are great. However, if you want to take fellow vets out for a ride, pulling gears on a 6 speed is a great way to get smiles -110%
