      Fuel Cut Off Switch

I have a Sniper EFI on my car and I read about using an on/off switch to disable the electric fuel pump as an anti theft deterrent, my question is what switch is recommended and should I run it through a relay?

The cheapest way for the theft deterrent is to pull the fuse for the fuel pump. Personally put an on/off switch on the low current side of the fuel pump relay. I also put a Ford inertia cut off switch in the circuit as well, in case of a crash.

I agree with rickpaw. You will want to cut the low current side of the relay and just about any 1A + toggle switch will be fine for that job. I also used a Ford inertia cut off switch on my car. If you install one of those, it also runs on the low current side of the relay. Either switch will interrupt energizing the relay and keep the fuel pump from running.
