I'm rebuilding my sbc 9/16 engine. My kit came with engine tech head gaskets. Has anyone used these on an engine that is around 11:1 and turn 6500 rpm?

No, but I have used other gaskets from Engine Tech with no issue. However, none were for high output applications.
Although I think their products are good, I would lean towards something I know better like the Fel Pro marine series gaskets for a high output application. Head gaskets are cheap. A failure is not.
