I don't know what previous owner was thinking with this color scheme, these are new covers and I would hate to have to replace them all I want is just black, has anyone had luck with vinyl spray paint or what other options do I have?

If it had a red stripe instead of green, they could be Batmobile seats! Before I'd try to paint those seats, I'd just throw a pair of seatcovers over them, and call it done. The ideal solution is to have them redone, which may cost more, but shouldn't take much time to do, as good condition as the seats are in, now.
Cool interior pic, looking forward to full pics of this car, sometime!

If your car is just for spectator show, seat covers are the cheap solution.
If your car will be judged (for awards), then recovering the seats will be the correct solution.
Painting the material doesn't look good, or doesn't last from wear & tear (getting in/out, rubbing on/against seats, etc.).
Other choice may be just to leave them as they are, and just take time to get used to them. They're in really good condition, and they don't really look all that bad. I doubt you'll get many comments about them, anyway, when most people will just admire the car for what it is.
Thanks for the compliment, too. I like all GM A-bodies, but I've been privileged to find/own 15 '70 GS's, as they've come to me. The convertible is just a get around car. The Stage 1 (hardtop) is my "Holy Grail" car, that took me almost 20 years to buy, and won't be offered for sale, at any amount, not now, and probably not later, either! It will be awesome as soon as it's done, I can't wait!
I just got done making my suspension list from UMI Performance, as Ramey really shared his knowledge & experience to help me narrow down my choices. I'll be placing that order soon, to have the parts ready for the chassis assembly!
Keep me posted on the seats, I'd like to know which way you decide, or how they turn out!

Interesting write up, I tried to dye my corvette seats a couple years ago and it didn't turn out that great, don't think I prepped it enough, however I did do the door panels with duplicolor vinyl spray and it looked really good, just not sure about the constant in and out abuse if it would hold up. Ah screw it I'm gonna try It, I'll keep you guys posted

Thanks, that sem paint is amazing stuff, my 1 yr old runs back and forth on the backseat while I'm doing stuff to the car and it still looks as good as the day I dyed it.

SEM makes good stuf as does Martin Senour or NAPA paints are made by them for the locals, all made by Sherwin Williams. I used to buy Jet Black vinyl dye 4 or 5 at a time and only time it wears off was car door that had dyed panel out in weather and its still got most of the black. biggest thing is cleaning and NOT using Armor All. Also many dyes will warn you what not to use on it.
