I've seen a number of crossmembers advertised with only one bolt hole for the trans mount pad. Will one of these actually hold?

yes it will.
they usually in the 5/8" thread size.
there is no sheering forces on the bolt. and the pulling, stretching forces are reduced by the mount pad.
