I have been looking, is there a fuel injection tank ready to go for 78-81 F-body?

Not that I know of. I am using a 4th gen. fuel pump module like this, on a 79 TA

First photo is the 4 Gen Fuel pump Module installed in the tank.
The original fuel sender needs to be retained because the fuel sender and gauge is 0 - 90 ohms.
The 4th Gen sender and Gauge is 40 - 240 ohms. The 4th gen sender is easily removed.

What did you do for baffles?

The lower white plastic cylindrical part is the baffle, it's called a bucket.
Search these forums for 4th Gen Fuel Pump Module.
