First order of business is to assemble Mr Grinder!!

Then I cut me some venison into cubes. Nice lean meat here. Having the grinder at hand I can afford to cube the meat very selectively just tossing the less than choice cubes into the grinder.

finished with the venison here about ten pounds:

Then I get out the rest of the meat and cube the top sirloin and grind the trimmings so very little waste.

That there is about
10 pounds venison five cubed, five ground.
5 pounds beef - 3 cubed top sirloin and 2.5 ground.
2 pounds pork sausage and
1.5 pounds ground elk.
18.5 lbs of meat will do a tripple batch. My chili is never exacly the same but as long as the ratios are watched closely it works out great every time.
The original recipe calls for about 6 lbs of meat.
Its been about hour and a half to get this far.
I'm just havin a beer break and then I'll go brown the meat.
Tomorrow I'll do the assembly and let it simmer in the pressure cooker about 4 hours then Ill let it sit for an hour then cook another couple hours.
