Rev on the redline by Foriegner is a great one most don't know about.
There is a song by Cake that I can't remember the name to but everytime I hear it while driving my foot gets real heavy.
Radar love by Golden Earing is always one of my faves too.

Led Zepplin - Travlin' Riverside Blues and anything off How the West Was Won especially Immigrant Song that plus jeep equals off road hi-jinx. Even when driving in really crappy horrible snowstorm at night weather my wife knows to put Zepplin on and we get home. Loud but somehow calming.
