Question...once I take off all the paint/etc. down to bare metal, what product can I use to keep surface rust from forming on the exposed metal? I've seen pictures of cars with the entire body exposed being showed at events. What are they using...is it WD-40???? I would appreciate your comments!

Possibly a phosphate coating. One brand of this type of rust preventive product is sold at Home Depot under the name Ospho.

DO NOT USE WD-40 ON ANYTHING THAT WILL BE PAINTED!!! DO NOT
put the pipe down!!
if it is going to be a long process to get body work, etc done i would put epoxy primer over it, that way you can do body work over it, etching primer you cannot body work over, and will not seal metal from moisture, it only etches surface and gives it some anti corrosion

I've been using Eastwoods Metal Wash for years.
The best part is you don't have to remove it before you prime or start bodywork.
It acts as an adhesion promoter and a corrosion inhibitor.

I use this stuff on bare metal or just after welding/grinding.

Picklex 20 (http://autobodystore.net/Merchant2/merchant.mvc?Screen=PROD&Product_Code=P20&Category_Code=RCAC)

I know it's a rust converter, and maybe not meant for coverage on a whole panel just for the purpose of a preservative. I also recommend an epoxy primer - you can put it over the picklex if you need to use it for rust conversion - that would be the best thing I think

WD-40

If it has silicon it is not good for anything that will eventually be painted! unless you want that custom fish eye look with maybe some lifting!

When we build a car we get it stripped and just leave it bare metal with nothing on it we have pretty high humidity here and still have no problems!
