This may sound like a dumb question but I can't really figure out an answer through Copart's videos. I've been looking at several 04-08 F150s on there to buy just for the engine and a few other parts and then part the rest out. If I find one on there I like and I get the high bid at say $300, does that mean I get the truck for $300 or I won the right to bid on it at the auto auction?

You won't find one for $300. There are too many salvage dealers on there who know what the parts are worth.
You would have to go through their registration process, whatever that takes. Then be ready to pay their buyers fees, internet fees and loading fees which will drive up your purchase price by 15-20% by the time you are done.

There have been several F150s in my area that don't sell on Copart. I'd gladly pay 20% on any of those that don't sell. The last one sold for $975. Most of the ones I am looking at are so far heavily damaged that they aren't worth repairing.
