I need your opinions for my 1963 Nova. I have 17x8.5" and 18x9.5" rims and I am considering 265/35/18 and 23/40/17 tires. I am concerned that they might look like O-rings.

Personally I would go 245 and 275 unless you have clearance issues.

Man, those Nova's are small, and 18's look like 20's on those cars. Are you dropping the car down too? I would say that the deciding factor is going to depend on ride height and overall clearance. Any photos?
Unless you have done some modification to the rear end a 18x9.5 will never fit. just not enough room. The leaf springs will have interference. A 18x8 is a tight squeeze on a stock car. even with a air bar and the leaf springs removed its pretty tight.

I have very little clearance even with the mini tubs. I am really afraid of making the car look like its riding on o-rings and I am still concerned with handling. I might be able to fit 275's but I had 295's in there at first and they rubbed everytime I turned a corner.

its really depends on you personal taste but I put 275/35/18's on
my camaro and when I do it again I will try 275/40's.
to me it needs more rubber.

Sounds like you may have answered your own question.... A 275/40/18 would probably be the best fit.
