I am in the market for a 69 Camaro G Machine. Where should I buy one or have one built? Can you suggest websites or shops that specialize in this type of custom car?

Speed Merchant (http://www.speedmerchant.com)
They aren't in TX, but sometimes you need to travel to get the best results.

i have a friend in san antonio that has a shop..its called rangers auto customs..he is building a bad ass original 69 z28 PT car right now...custom front suspension, wayne due independant rear suspension, and too much other stuff to list..
he also did a 62 corvette LS1 as well..tons of other projects completed and in the works..lots of pics...check out his web site http://rangersautocustom.com/
