Tire size for a 12" rim

So now that I have one of my deep tubs and quarter panel in, I measured today and found that I have an extra 2 1/2 inches clearance between the wheel and deep tub. I'm going to send my 10" rims away and get them widened to 12". (Only cost $150 a rim and this company has an awesome reputation). What tire will fit a 12" rim and basically be flush to the rim? The clearance between the tire and outer wheel house/quarter lip is going to be tight so I need a similar fit to the tires I have. Here's what I mean:

How tall of a tire?

Yeah I guess that would help. It's an 18" rim and right now I have a 285-35-18 on it. Looking to go wider. Thanks.
