A lot of times, you can run through the weight station at a truck stop off the interstate. Just tell them what you're trying to do, and if they aren't busy, they will usually try to help. Another place would be the local dump. I'm pretty sure they weight each truck that comes in and out... If they're not busy, I bet they would help you out. Hell, it would probably make their day to see a bad ass car...

Food processing plants also have scales you might be able to sneak on to. We have a General Mills plant the used to be Green Giant and you can actually drive onto it get your front end weight if you can see the digital readout from that end of the scale, weigh the whole, then weigh the rear and take off . The thing takes about 1 min. They might see you on the remote camera but that's about it and sometimes they leave it on all weekend.
Remember that if you go to a weigh station that you might be driving right into a vehicle police station if the state police are there.
