Has anyone had some experience or can recommend an insurance company to insure a high value pt car? My car is almost finished and has been professionally appraised at 160k+. I haven't got a straight answer yet from my Statefarm agent regarding covering this vehicle and am wondering if going through a specialty company like Haggerty or Classic Auto insurance might be a better choice for this type of car.

I'd go through a specailty insurance company on something like that. I have hagerty on my 56'. But state farm on the 68'. It was a PITA to get state farm to agree to a agreed value policy. Even with an appraisal.

Check out Grundy, they gave me a better quote on my 67 Camaro than Hagerty

I like Grundy because there is no mileage restriction.

do not even consider State Farm for that car; you need agreed value coverage, and they do not offer that, contrary to some peoples opinions.
You need a specialty company like Grundy or Hagerty period.
