I often wish my Caddy was pillarless but now that I think about it I guess it's a trade off and pillarless bodies flex a lot more? Body flex is always a bad thing right?

Yes body flex is not something you want if your seeking performance. Now every car is different so you can't really classify all "pillar-less" cars as you stated into one category, considering there are convertible pro-touring cars that are braced well enough on the underside that perform equally to their fixed roof counterparts.
& besides your typical classic car with long expanses of pillar-less glass is going to be a boat anchor with a full frame anyway so your a step ahead of the strength in a uni-body but then you've got 500 extra pounds! Either way I don't think it should be a big concern, if it handles well and you don't push it beyond the limits you built it for then your good to go!
