What kind of info is important in determining which Converter is best suited for a car?

Is stall speed the most important factor?

I'm running a 400 sbc, TH350, and a 12-bolt Posi with a 3.42 final.
I don't know what type of converter I have. Right now it is assumed to be stock from a 6 cylinder car. I won't jump on the track a lot, but I will occasionally. It's a daily driven street car.

Will stall speed effect top speed, fuel efficiency, or daily drivability?

Yes, yes, yes. However, not much in a mild build up. Torque converter is a very specialized piece in high end, high horsepower pieces. it is also important in mild combos, but usually will not require a high dollar custom built piece.
What is your motor?

A real important factor is camshaft. the more lift and duration the more stall you need. most cams tell you the rpm range and that is a decent guide to where to start with a stall selection. Of course rear ratio(you said3.42) and rear tire size are other factors. If you are already driving the car and it idles ok without locking up the converter, you are probably ok with what you have. There is nothing more irritating than a 3000 stall if all you needed was 1800.
