I was thinking of cutting the Dynamat into 1 foot tiles and installing them in the car. My reason for this is I figuired it would be easier to work with, and be easier to apply around curves and trim to fit.
Are there any downsides to this? Will I lose the sound deadening effect, or lessen it, as apposed to using a larger sheet? Maybe 2x2 tiles?

You should have no problems with that. The stuff is basically putty anyway and can be pushed together. I would just say to try and keep the pieces as big as possible. Sometimes the backing can get a little annoying when trying to peal it from the mat. It is also a pain in the butt to try and place lots of little squares everywhere.
I usually cut it into shapes to match the surface I am placing it on, they do not have to be any discernable shape. It still works the same.
Oh yeah, you can also put it down in large sheets. The stuff is really plyable and can be 'rolled' or smoothed into place. You will probably get small bubbles in it even after you have tried to push them out. Just take an exacto knife and punch a small hole in them and roll the area again to get the air out.
