I see a bunch of different rear disk brake kits that all look very similar but some of them are $400 and some of them are $1000. What's the best bang for the buck kit that has good balance with C5 fronts? Or would it be a good choice to just put good shoes and drums on the stock rears?

I've used C5 front disc's and 1997 Camaro and 2002 Camaro rear discs on a number of swaps.
I prefer the 2002 Camaro since it has the e-brake configured as small drum brake inside the rotor. I use a Wilwood adjustable prop valve.

What rear is in your G body? Ls1 camaro(98-2002) rear brakes are a good option if you can find the parts, C5 rear brakes would be another good choice

Just a stock 7.5.

Do LS1 rears use the stock parking brake cables?

On my hot rod projects I use the Lokar e-brake universal cables. They come with a bracket that slips right over the 2002 Camaro e-brake "arm".
