What is the proper way to mount a seat in a car with a roll cage? I have seen alot of cars that have some sort of bracket that connects the rear of the seat to the cross bar. I have the Jeg's Sport Seats with 5 point harnesses in my car. The seats are mounted to Corbeau brackets that go right onto the factory seat mounts on the floor. There is about 6-8 inches of space between the rear of the seat to the cross bar. Do I need one of those brackets?

It is unlikely you need those additional brackets as long as the seat mounts are factory or equivalent and are in proper condition (not rusty or compromised).
Are you planning to compete in sanctioned events? If so, refer to the sanctioning body's regulations for safety equipment. My car has a 4-point rollbar with a single diagonal brace from the passenger side lower plate to the top of the driver side. I also have a harness bar that bolts in to hold my shoulder harnesses. The lap belts are attached via eyebolts to the floor with proper washers. The eyebolts came from G-force and are designed for harness mounting. The anti-submarine straps (6-point harness) are attached to a plate that is held in place by the seat mounting bolts at the rear of the factory seat mounts.
I use this setup for the Sandhills Open Road Challenge. I referred to their regulations, SCCA and NASA for construction guidelines.
Of course, if you are worried, additional seat support attached to the roll bar cannot hurt.
If you do attach the rear of the seat to a reinforcement, PLEASE use a wide plate/structure that would not act as an impalement device.
