Motor has 31k miles out of a 2005 Cadillac Escalade. Swapping into a ‘72 Nova along with a 4l80e tranny. So far we have the Elgin Sloppy Stage 2 cam and PAC 1218 valve springs.
What brand/length pushrods, lifters, head gaskets would y’all recommend?
Also, anything else to consider while in there?

I would use the existing lifters...use a stock LS9 head gasket...

With only 31k and if the stock lifters are re-used should we even change the head gaskets? What about pushrods??

Why pull the heads if you don't have to? I'd change the cam and rock on. You'll have to see if that cam has a reduced base circle. If so, you'll need longer pushrods. You can install the cam and then use an adjustable push rod to figure out the length. The stock push rods are 7.395".
