I was thinking about using steel 'Rivet Nuts' as the attachment points for several grounds rather than driving bolts into the sheet metal. It would make for a clean install and I could use stainless button heads for a tidy look. Has anyone done this or are there any pro/cons to the method?

I see no issues with doing that. I also like using the thick braided stainless style of ground straps. AC Delco makes all kinds and they are relatively inexpensive on Amazon. Like this:

Right. I've done that, works great. Just make sure you are using like metals, or you could encourage galvanic corrosion.
