Looking at tire options and noticed if I run a 10.5" wide rim I fall into the middle for acceptable widths for 275 and 315 tires. Anyone run a half size rim? Thinking of just going 11" but not sure how silly that would look with a 275 on it.

I don't personally run a 10.5, but I have seen 18x10.5 wheels on a 4th gen Camaro that had some 275/40/18 tires on them. I was surprised at how stretched they looked, even with wider-running BFGs .

The C5 Z06's have 10.5 wheels, and they run a 295/35/18 and look really good - nice and "square". A 315 certainly wouldn't be out of the question though. That seems to be a common set up guys run on 2004-ish Mustangs.

Looking at tire rack.com, it shows the 275s go on a 9-11" rim and 315s are 10.5-11.5"

10.5 is the widest I'd suggest for a 275 tire. 11.0 and 285 wide max. Both will appear very stretched looking.

I have 10.5" wheels on my GTO and I run a 295 tire. I run a 275 on a 9.5" front. Both front and back sit very square with BFG Rivals.

Stock tires on my C4 Corvette wheels are 275s--this is on a 9.5 inch rim. I have seen 275s on 11s, but fit really depends on the tire manufacturer. Autocrossers like some stretch, whereas a lot of road racers prefer a more square tire (racing tires can also tend to have much stronger sidewalls) . . .

Unless you're looking for the stretch look, I wouldn't run anything narrower than an 295 on an 11" rim.

Here's a 295/35 19 on a 10" wheel
