I will be going with the Corvette 340MM front brakes on my 64 El camino and was wondering what size rears I should use ? 305 or 330MM ?

Larger rotors do not really increase brake force as much as you may think. Larger rotors are to a degree more of just eye candy. I used smaller rear rotors to save some weight. You can then dial in your brakes with a prop valve and pad compounds

I'd go with 305mm, but more importantly you need to match the front to rear piston area.

I will be running the Corvette brakes via a Kore3 kit and have front and rear calipers off of the same car . I am also running a Wilwood master with the prop valve . Is there something else I should be looking in regards to the front to rear piston area ?

You should be good with that.

The 330mm C6 Z51 rear kit actually uses a smaller piston diameter (42.5mm) than the 305mm base level kits (45mm), so it basically offsets the increase in brake torque due to the larger rotor diameter, so you should be fine.
