Is there a rack and pinion swap for the 73-80 one ton? or an alternative box to quicken the steering.
Secondly will one ton Dually rotors fit on the standard One ton spindles?

I believe there are quicker ratio boxes available, maybe try AGR? I haven't seen a rack and pinion setup for them though.
If both trucks have JB8 (hydroboost) brakes, the spindles are the same so the rotors will fit. Had to deal with this when looking for stock spindles to replace the drop spindles on my 79 GMC Dually.

I know that no limit makes a rack and pinion kit for the c10s should fit your one ton also.
For steering boxes you can upgrade to an AGR box or similar to quicken up the ratio.

I bought a quick ratio box from Early Classic Enterprises in Fresno, CA for our '71. Excellent steering response with about 3.5 turns lock to lock.

most of old 1 tons had bolt on adapters to fit dually wheels. just did brakes on one the other day. un bolt adapter from hub/rotor.

Lee, I wish those year Chevys were that way. Rotor and hub were all one-piece, one darn heavy piece.

I thought about fitting the dually adapter from the newer trucks to early square body rotors to convert my 68 K20 to a dually. I have both parts sitting around at home and will see if they can fit if you want. The rotors I have are from a square body K20 so the hub is slightly different. It may not be the same hubcentric fit as a C20/ SRW C30.
