I have a 2002 Tahoe with a 5.3 vortec. Truck is done but motor still runs great. I know nothing of the modern terminology of engines being a pontiac guy. (Last project 71 formula with 455)
This is considered what, an ls1?
Is there enough potential in this platform and configuration (ie out of truck) to pull and save for a project? Next in line is a 71 mustang sports roof. Probs restomod or bracket car??
I have the 351c also. Is there potential for the 5.3 swap or waste I time?
Any thoughts on this very broad nonspecific question?

Yes that is an LS1. If you pull it take EVERYTHING... Computer, harness, trans, everything you can think of. If you can store the truck intact, until you do a swap, that is a good way to have everything at hand when you need it.
As far as putting it in your Stang, that's sacrilege... Do-able yes, but sacrilege... Would make resale on the car tough in my opinion.

Technically speaking you have a GenIII small block, the 5.3L were LM7s. They have cast iron blocks as compared to the LS1s aluminum blocks. As Mark said, save everything. If you want inspiration, check out my 1967 Cougar build (using a "LS" engine).

Well technically speaking, you have a vortec engine. :) Truck = vortec, car = LS

I figure I got to either learn Ford or gm power secrets just figured u guys have been around the block a time or too.
We have an 1/8 mile track not too far from here and was thinking about throwing my hat in the ring..

Head on over to ls1tech.com and take a peek in the forced induction section. There are plenty of guys making a lot of power with mostly stock junk. If you want to step it up, get some forged pistons and rods, and you are good to go.

isn't an ls1 also the 5.7l variant

and isn't the common name fore any of the vortec/ls engines 'lsx' (even though technically this is incorrect since gm makes and sells a specific block that is an lsx block)

The LS1 is the 5.7l as stated before, but never came in trucks. The Vortec 5.3l is what came in the trucks. Since they're both "LSx" engines, many parts will interchange between them.

My opinion, I'd run the Cleveland. With the right work done, it's a wicked motor haha

I try to be more specific because people think all GenIII or Gen IV engines are LS1s, then they get the engine and it turns out to be a 4.8L from a truck, The platform is similar but there is a tremendous amount of variance in block material, head design, internal components, and accessory drive systems. Not to mention cable TB, vs. DBW, etc...etc...etc...
