I have decided that I would like to stay with 15" wheels for my corvair project. What are the best brakes that are able to fit within a 15" wheel? The car will be on a G-Body chassis and weigh 3400 lbs or less.

Nascar brakes :P You'd need to run Nascar style 15" wheels though. Honestly though, the best brake package is going to be a custom brake package. About the max you'll fit is a 12.19" rotor, and while some packages may fit one set of 15s, it will not fit another. Caliper clearance is hard to clear. I spent many hours measuring and designing templates when putting together my brake package.

If the car is on a G-body chassis, will it have a G-body steering knuckle? If so, G-body brakes seem like a pretty convenient solution.

At this point it will have g body spindles. The factory rotors on a g body are 10.5". I'm sure it will be fine for mild street driving but I'm not sure how it will hold up beyond that point.

If you want a dual piston caliper the D154s are a bolt on for the metric GM calipers on those G body spindles, Wilwood makes a D154 rear kit also.

There used to be a Corvair that did really well in the SCCA national level autocrossing in the Prepared class.
