I have to put the tires on a 1968 LS1 pro touring Camaro
Which do you think are the better ?

I'd go with the 275/35/18. You'll appreciate the extra side wall up front since that's where most of the 1st gens weight is. Also the tire options for 275/35/18 are far better. You can get some super sports for only $240 each.

Depends on a few things:
The wheel width you can get in front. You need a 10" (preferably 10.5") to mount a 295 tire. Clearance is something to look into for both sizes.
Does your car need a wider tire in front? In most cases, people error on the side of getting too narrow a tire up front (compared to what will fit), which compromises handling and braking. 275 is nothing to sneeze at, but another 40mm up front is going to help.
Availability - 295-30-18 is not super popular as the 275-35-18, but you do have the option of a 285-35-18 (or 295-35-18), which is pretty common size.
If it were me, I would stick a 315-30-18 up front if it could fit.
