What is the difference in the LS engine 5.7 and the 5.3 and which is better ?

5.3 was the truck motor and most of the time has an iron block, with a few exceptions of aluminium blocks. The 5.7 is the LS1 which has an aluminium block. There are other differences but I'll let someone with more knowledge fill those in. A 5.3 can be made into a LS1 with a few mods.

The 5.3 has the same stroke as a 5.7 but a smaller bore.
Most 5.3s have iron blocks but aluminum blocks are get easier to find, although the usually have DOD and VVT. I have been told that all 5.3 blocks can be bored to 5.7 specs.
If you are looking for an aluminum block 5.3 you will be looking for L33, LH6, LC9 from Silverado/Sierra or LH8 from Canyon/Colorado.

Bigger is always better. No replacement for displacement!

What Scott said.
In stock from the 5.7 has more hp because it's bigger and probably a little more compression than the truck engines..
They can both be built up to the same hp level. 5.3 has more material between cylinder walls since it's a smaller bore which means less rotating mass and less likely to blow through the cylinder walls with a lot of boost.
In the case of VVT and DoD, 5.7's are "better" because they never had it.
A little more explanation would be helpful, I feel like it's a Chevy vs Ford post "which one is better" lol.

there is no "better" just different if one (brand A) was better than (brand B) wouldn't exist, if its about size and HP the 5.7 is bigger than the 5.3. but then the 6.0 is bigger still and then the there's the 6.2 or 7.0 push up in size also....if you want light weight and higher buy in its the 5.7, if your going to boost it I would use the 5.3 or a 6.0 and between those the 6.0 has more torque for racing, but you might be able to get the 5.3 to Rev higher(lighter rotating mass) .....see what I mean....... so what do you want to do with the car? how much does it weight? whats the budget? power adders or not? what do you have in mind?

Why are you asking if you already have a 5.7L installed in the car?

Looks like yuou are well on your way to being done. as with any other engine, if you want more power, you want the most displacement. That's why I waited to find the right 6.2L for my GTO. More bigger is more better.....

Problem with LS1s is the newest is 10 years old with who knows how many miles.
I went with a low mileage 5.3 in my Olds. About 1/3 the price of an LS1
