Getting wheels-tires mounted and balanced?

I have my Toyo R888's in 275 and 315 waiting to be mounted to a set of Vintage Wheel Works V40's as soon as they can make them. What questions should I ask a perspective shop to see if they are going to get the job of mounting and balancing done right? They will be going on a track/road car. Any particular type of wheel weight or balancing procedure I need to ask for?

Mine came back with some big pads on the inside lip that were visible through the spoke. Looked like crap. I asked them to do a spoke align so they were not visible. Also might be a better option to do the clip on style instead of the stick on pads.
