i dont know which block to use a 350 or a 400 on my 1957 pro touring truck project

That depends on what your planning to do. But, it is so much better in the long run to go with a aftermarket block (Dart, perferably) than to spend time and $$ on a stock block, only to end up with a expensive block that is not as good as the aftermarket offerings.
