      Doing a Google search for "smoke a fatty/fattie" will yield more ideas than you could cook in an entire weekend. Jalapeño peppers are a good match with the typical bulk sausage (Jimmy Dean, R.B. Rice, Tennessee Pride) type one pound rolls. But yea Andrew, sounds like you've got the picture of what a fattie consists of.

      You'll need the following:

      1lb bulk Mild Italian Sausage
      1/4lb bulk Hot Italian Sausage
      1 8-10" Italian Pepper
      1-2oz Shredded Parmesan
      Mozzarella
      3-4 Tbsp Marinara
      8 slices Prosciutto
      Granulated Garlic

      Knead the mild & hot sausage together and press out flat.
      Dust Sausage with a bit of the Granulated garlic
      Spread 3-4 Tbsp of the marinara over 2/3 of the surface of the spread out Sausage
      Slice the top off of the Italian Pepper, remove seeds & stuff with spears of Mozzarella
      Place the pepper lengthwise on the sauced end of the sausage and roll toward the un-sauced end
      Shape the roll and close up any gaps.
      Dust again with granulated garlic and wrap in prosciutto

      Pop it in a ~300deg smoker until the internal temperature reaches 160deg. Put it on a plate tented with foil to rest for a while then carve into ~1/2" slices.

      Nice recipe. I bet it would also work great with veal instead of the sausage.

      If you use ground veal Id still go about 50/50 with pork so it isn't to dry. The spicy italian + smoke is a nice combo.

      I was looking into a pellet grill about a year ago. I was told Treagrs were nice....A friend saw one in person and said it was a flimsey Chineese made POS and he would never spend that kind of money on one. So I started looking for a good US made one. I found this guy who makes pellet grills in Nebraska. It looks like its built strong. I was going to pull the trigger on it but ended up just getting a propane Weber ES330 a few weeks ago.

      Smokers...BBQ...NOT grilling...

      I use a BGE and love it. I make everything from steak, burgers, ribs, butts, pizza whole turkeys, bacon stuffed cabbage, prime rib......... You get the idea. It is a very versatile grill. One thing I would do is try to find a place local that does classes. I did that and it was very helpful with technique as well as thinking of item to cook that are not the normal things like pie.

      There's a bunch of US companies making smokers, actually.
      It's just that you won't see them on the shelves of Home Depot or Sears because they're smaller companies and couldn't keep up with the demand.

      Ahhhh...sorry about that. I thought that section was open to the public.
      The photo is a trailer type smoker, painted shiny red with brushed aluminum and is larg enough that it requires four wheels.
      If you're interested in learning about smoking food, that site really is a wealth of great information.
